eel cuisine/classic Japanese course

Daikanrō first opened for business in 1822. It is located 5 minutes’ walk from Hirose-Dōri Station on the Sendai subway. Because of improvements in water storage technology by wholesalers there are not many eel restaurants nowadays with their own dedicated well to provide pure water for storing eels. Daikanrō, though, is one of these, allowing it to continue its long tradition of both providing the freshest eel, kept in perfect condition right up until it is prepared for cooking, and keeping to the ethos of showing thanks for being permitted to partake of the life of the eel by using every last part of the animal in cooking. This respect for life can also be seen in the regular staff meetings held by the restaurant to improve teamwork, and the continued efforts put into being well prepared in the event of a disaster like the 2011 earthquake. The first floor has table seating for 18, and a raised Japanese-style seating area with a capacity of up to 24 (shoes must be taken off for this). The second floor seats 8 at a counter, and a further 16 at tables. Another raised seating area has seating for 24, and there are also 4 private rooms. The third floor houses 3 more private rooms, and a hall for larger parties, allowing the restaurant to cater to almost any size of group or occasion. The restaurant is barrier free, with an elevator and bathroom facilities for those with wheelchairs. The owners are proud of the elegant Japanese ambience of the private rooms in particular, but most of all of the welcoming smiles and hospitality of the staff.
The staff are always happy to answer any questions about the food served, and do their utmost to provide a warm and congenial atmosphere for every group, from when they arrive to when they leave. The 3 tenets of an eel restaurant are: 1. Purchase live eels, and prepare them for cooking in-house. 2. Have a dedicated well that provides pure water to keep the eels alive and in good condition. 3. Grill the eel over a charcoal fire. There are few restaurants now that can boast all three of these together, but Daikanrō has always placed the greatest of importance on them, and also the expert skills of its staff.
